About Us Jose and Kathy Pineiro are originally from Staten Island NY. We always dreamed of living in the country and owning our own restaurant. The hotel was a bonus. I, Kathy Pineiro have worked in several restaurants’ in Staten Island. It was there where I gained the knowledge of running my own restaurant. I wanted to own Rainbow Lodge for a long time. I introduced my husband to Greene County over 25 years ago, and he fell in love with it as well. We are looking forward to hosting banquets, weddings, holiday parties, Birthday parties at Clancy's Rainbow Lodge. Something for everyone.
